Abstract
Son yıllarda dünyada yaşanan hızlı gelişmeler, firmaların küresel düzeyde rekabet etmelerini ve varlıklarını sürdürebilmelerini zor bir hale getirmiştir. Bu rekabet ortamında firmaların üstünlük sağlamalarında tedarik zinciri yönetiminin(TZY) önemi büyüktür. Verimli TZY'nin yanı sıra 'çevreye duyarlılık anlayışı', birçok organizasyonun günlük ve stratejik aktivitelerini gerçekleştirirken önemsediği bir konu olmuştur. İşletmeler, tedarik zinciri faaliyetlerini çevreye daha az zarar verecek şekilde yapılandırmaya özen gösterirken sosyal, ekonomik, operasyonel düzeylerde kazanımların yanı sıra ekolojik bir değer de yaratma çabası içerisindedirler. Bu nedenle yeşil çevre, yeşil tedarik zinciri gibi kavramlar giderek önem kazanmaktadır. Bu önem kazanan alanlardan bir tanesi gıda sektörü ve onun altı olan kırmızı et sektörüdür. Yeşil tedarik zinciri yönetimi (YTZY), çevreye karşı duyarlı olunmasını, temiz üretim yapılmasını ve canlıların yaşam kalitesini artırmayı ve korumayı amaçlamaktadır. Çalışmanın amacı, gıda sektöründeki bir firmanın yeşil tedarik zinciri hakkındaki bilinçliliğini ortaya çıkartmaktır. Araştırma İzmir'de üretim yapan özel entegre et tesisinde çalışan 10 katılımcı üzerinde yapılmış ve olasılığa bağlı olmayan yargısal örneklem yöntemi kullanılmıştır. Araştırma sonucunda çalışanların firmanın YTZY konusunda farkındalığı yüksek ancak firmada geliştirilmesi gereken alanlar olduğu sonucu ortaya çıkmıştır.
In recent years, the quick developments in the world have made it very difficult for companies to compete globally and to continue their existence. Such intense competitive environment, companies in providing competitive advantage in supply chain management(SCM) has great importance. In addition to efficient SCM, 'environmental awareness', has become a subject that many organizations care about while carrying out their daily and strategic activities. While businesses are taking care to configure supply chain activities in a way that is less harmful to the environment, they strive to create ecological value as well as gains at social, economic and operational levels. Therefore, concepts such as green environment and green supply chain are becoming increasingly important. These concepts are significant in food and its sub-industry, red meat sector. Green supply chain management(GSCM), has a purpose for environmental awareness, clean production and raising and protecting the quality of life for beings. The aim of this study is to explain the consciousness and knowledge of a food company about GSCM. The study was made in İzmir with 10 participants working in a meat integrated plant by applying nonstochastic judgement sampling method. As a result of the research, it has been understood that participants have good knowledge about GSCM, however there are important areas needed to be developed in the company.
