Abstract

Günümüzde teknolojinin ilerlemesiyle birlikte kültürler arası etkileşim artmış bilgi paylaşımı hızlanmış ve gastronomi turizmi gibi farklı turizm çeşitlerine olan ilgi de artış göstermiştir. Özellikle günümüzde tüketiciler sağlıklı beslenme konusunda daha bilinçli hale gelmiş ve bu çerçevede sağlıklı doğa dostu ürünler ve yiyecekler tercih etmeye başlamışlardır. Bu eğilim yansımaları turizmde yoğun olarak görülmektedir. Bu çalışma İzmir destinasyonunda gastronomi turizmininin kapsamını incelemeyi amaçlamaktadır. Bu doğrultuda nitel araştırma kapsamında İzmir’de gastronomi konusunda uzman 16 kişi ile mülakatlar gerçekleştirilmiş ve toplanan veriler içerik analizine tabii tutulmuştur. İzmir gastronomisi ve gastronomi turizmi ile ilgili değerlendirmeler bulgular kısmında ele alınmış ve yönetimsel uygulamalar sonuç kısmında yorumlanmıştır.
