Reducing inventory and lead times in supply chain through value stream mapping / Tedarik zincirinde değer akış haritalandırma ile stok ve akış süresinin azaltılması

Abstract

Sürekli gelişmekte olan lojistik sektöründe rekabet koşullarına ve lojistik süreçlerindeki değişimlere ayak uydurabilmek için yalın üretim tekniği firmalar için uygulanması zorunlu hale gelen bir teknik olmuştur. Müşteri memnuniyetinin her sektörde olduğu gibi lojistik sektöründe de en önemli kriter olduğu düşünüldüğünde, müşteri isteklerine odaklanmak için yalın üretimin hedefi olan israfları önlemek gerekmektedir. Üretimdeki israf türlerini tespit etmek, üretim akışını hızlandırmak, stok seviyelerini azaltmak ve toplam maliyeti en aza indirgemek için değer akış haritalama yöntemi çalışmakta olduğum Zumdieck Konserve Dondurulmuş Gıda A.Ş. de uygulama örneği ile açıklanmıştır. Değer akış haritasında tespit edilen israf türlerini azaltmak için AHP çalışması yapılmış ve iki tekniğin de sonuçlarından faydalanılmıştır. Çalışmanın ilk iki bölümünde yalın düşünce, yalın üretim teknikleri ve ilkeleri, israf türleri, değer akış haritalandırma adımları tanımlanmış ve açıklanmıştır. Üçüncü bölümde hammadde tedarikçisi seçimi ve yükleme acentesi seçimi için AHP çalışması yapılmıştır. Dördüncü bölümde değer akış haritalamanın uygulaması yapılmıştır. Uygulama için fabrikada gözlemler yapılmış ve değer akış haritasında iyileştirilmesi gereken noktalar tespit edilmiştir. AHP yöntemi uygulanarak iyileştirilecek noktalar seçilmiş ve gerekli iyileştirmeler yapıldıktan sonra iyileştirmelerin olumlu sonuçlar verdiği gözlemlenmiştir. In the ever-growing logistics industry, lean production technique has become a mandatory technique for companies to keep pace with the changes in competition conditions and logistics processes. Considering that customer satisfaction is the most important criterion in the logistics sector as it is in every sector, it is necessary to prevent wastes-which is the target of lean production- to focus on customer demands. The method of value stream mapping is explained as an example applied in Zumdieck Canned and Frozen Foods A.Ş. where I work in order to determine the types of wastages in the production, to speed up the production stream, to reduce stock levels and to reduce the total cost to the minimum. The AHP technique was conducted to reduce the types of wastages which were identified in the value stream mapping and the results of both techniques were utilized. In the first two chapters of the thesis, lean thinking, lean production techniques and principles, wastage types, the steps of value stream mapping were defined and explained. In the third chapter, the AHP technique was conducted for selecting raw material supplier and loading agency. In the fourth chapter, the implementation of the value stream mapping was carried out. Observations were carried out at the factory for the application and the points to be improved in the value stream mapping were determined. The points to be improved were selected using the AHP technique and it was observed that the improvements gave positive results after the necessary improvements were carried out.
